2012 Cooking Courses at Lettercollum, Timoleague

 

18th Feb                       Winter Warmers
Soups, stews and casserole recipes to feed the soul and keep us healthy.
Winter salads to give buzz and crunch and a dessert recipe for pleasure.

 

25th Feb                        Gluten-free Cooking

This course will feature demonstrations on how to bake using gluten free ingredients. We will make breads, pastry, pizzas, scones and cakes as well as using seasonal ingredients to make wonderful gluten free meals for all the family.
The course will take place from 10.00am until 3.00pm and will include lunch, recipes and a tour around our walled garden.

 

10th March                   Low GI Cooking

Equip yourself with the recipes that will enable you to lose weight and balance your blood sugar naturally. Be inspired to make food choices that enable you to lose or maintain weight loss without feeling deprived. In this course you’ll explore menus that make use of wholesome ingredients, healthy fats and natural sweeteners. There will also be plenty of time dedicated to preparing dishes that will please your palate and help you to achieve your optimum weight. Low GI cooking is a way to avoid the mood swings associated with eating refined foods and sugar.

 

24th March                  Thai cooking.

Understand the basics of the Thai kitchen and learn how to make spring rolls, fish balls, tom yam, pad thai , curries etc.  This class is a mix of vegetable and seafood dishes. We will be feeling inspired after our recent trip to Thailand

 

21st April                     Spring Planting and Cooking

 We’ll begin in the garden with information as to how to plant your seeds and nurture the seedlings and continue in the kitchen cooking the spring vegetables that are beginning to appear and innovative recipes for everyday eating

 

28thth April                  Seasonal Wholefood Cooking

This course is designed to help you understand how to cook wholesome, health supportive and delicious meals (mostly vegetarian, but not at all restricted to), using a variety of wholefoods, including: fruits and vegetables, nuts and seeds, wholegrains and legumes. We will be using seasonal organic ingredients whenever possible.

 

26th May                      Salads, Salsas and Summer Food

The garden produce should be plentiful and the day will be spent between the garden and the kitchen where we’ll prepare lots of simple tasty dishes

 

9th June Summer Cooking

A walk around the garden and then a salad, salsa and
summer recipes class with plenty of eating

 

These classes cost €95.00 and include tastings, lunch and recipes.

A deposit of 50 Euro is required to secure a place on any of the courses
