2010 Cooking Courses at Lettercollum, Timoleague

Saturday March 13th
Pasta, polenta and risottos all enjoy a wide appeal and are simple to make. This class will show how to make fresh pasta, ravioli, tortellini etc. also simple pasta sauces for everyday dinners. We’ll also be making polenta, risotto, gnocchi and something fishy if the weather allows, finishing off with a simple but yummy dessert.
Grow and Cook with Herbs
Saturday May 15th
This class will be spent both in the garden and in the kitchen. There will be a trip to the garden to identify the perennial herbs, followed by how to plant the seeds and transplant seedlings of the annual herbs, also most importantly how to pick the herbs. The second part of the day will be spent in the kitchen where there will be a demonstration of how to cook the menu that we will sit down to eat. Everyone will be able to take the seeds and seedlings they have planted home.
Salad Class
Saturday June 12th
This class is also spent between the garden and the kitchen but with a salad theme. There should be a wide range of vegetables and fruits available to inspire the menu growing
Harvest Class
Saturday 11th September.
This class is more a walk in the garden to admire what has come to fruition and then a cooking class as at this stage we have planted most of the seeds that will for this year. There is an abundant selection to be harvested, tomatoes, pumpkins, sweet corn, beetroots, apples etc.,
This class will include making pesto, chutney and a full and interesting menu.
